Why Does Coconut Oil Change its forms?

As I have indicated in previous articles, my motivation for doing research into diet and nutrition was; I had gotten very sick, was hospitalized for a week and when released was still so weak I could barely walk.  I still didn’t know what was really wrong with me and what was worse the Doctor didn’t either.

In the hospital, my lovely and lifesaving neighbor brought me my requested reading material she added that she had talk to a friend of hers about something call Coconut Oil and Alzheimer’s disease.  It held out the promise using coconut oil could be used to help cure or at least stop Alzheimer’s and other illnesses.

I was already very familiar with Holistic medicine and the work of Health Ranger, Dr. Mercola and numerous other homeopathic dedicated Doctor and nutritionist. I had been reading their material for several years. I had seen that article and others like it before and the information impressed me for I had a jar of coconut oil sitting in my pantry shelf.  I just didn’t know what to do with the stuff.  It was hard as a rock and looked funny so I just forgot about the whole thing and went on with living.

Well needless to say, that jar took on a new importance. When I got out of the hospital, I was given 13 different prescriptions  for everything from Hypertension, Hypothyroidism, Border line Diabetes, Heart Arrhythmia and a Fungal Infection and told to come back in two weeks. I began doing research into getting better, healthy diet, healthy life style and nutrition starting with coconut oil.  My first question was how do I eat this waxy white stuff and why is it so hard?

So I put my thinking cap on and started to read

It Melts

I found that one of the characteristics of coconut oil is its high melting point. At temperatures above 76 degrees F (24 C) coconut oil is a liquid. At temperatures below this it becomes a solid. The oil will be either liquid or solid depending on the temperature of the room. There is nothing wrong or unusual about this. Butter for instance, does the same thing. In the refrigerator it is solid but on a hot day, let it sit on the counter and it melts. Olive oil when refrigerated becomes thickened and foggy, but out of the refrigerator it is becomes liquid.

Like butter, you can eat coconut oil whether it is liquid or solid. There is no difference in nutritional value or chemical makeup. You don’t need to liquefy the oil before you use it. Solid coconut oil melts very quickly when put in a hot pan.

If your kitchen is kept under 76 degrees F, coconut oil will always be solid. On a hot day it will become soft and melt depending on the temperature. You can keep coconut oil in the refrigerator if you like, but you don’t have to. Coconut oil does not need to be refrigerated. It is very stable and has a long shelf life so it can be kept hard, soft, or liquid on the counter or in the frig and it will stay fresh and healthy.

Now if you can handle some of my humor and to further illustrate the point –I have often said, “If you want to know what the temperature is, just look at the size of the cat.”  Now I can also add, “Just look at the coconut oil jar on the counter. Solid its cold, liquid it’s hot.”

I am now much much better.  I have returned to work part-time and am OFF all but one medication.  The struggle  and what I have found is why I have started this Web-Site and I have more stories to tell.
